Vietnamese Shrimp Cracker Salad
As seen in “Practicing Courage” Season 1, Episode 10
Ingredients
1 small carrot
1 small red onion
1 cucumber
3 tablespoons lemon juice
3 ½ tablespoons sugar
3 tablespoons fish sauce
2 tablespoons water
1 ½ teaspoons salt
¼ lb peeled and cooked shrimp
Prawn crackers
Chopped peanuts
Chopped mint
Steps
Cut cucumber in half and scoop out seeds
Cut cucumber, carrot, and red onion into small strips. Mix together in bowl.
In a separate bowl, mix together ingredients for dressing:
Lemon juice
Fish sauce
Salt
Sugar
Water
Fry prawn crackers according to package
Mix together vegetables, dressing, shrimp and prawn crackers
Top with peanuts and mint, if desired
Eat!
