Moroccan Potato Fritters

As seen in “Possum’s New Friend Beaver” Season 1, Episode 13

Ingredients

  • 1 lb potatoes

  • 1 egg

  • ½ cup flour

  • 1 tsp minced garlic

  • ½ tsp salt

  • ¼ cup fresh chopped cilantro

  • Spice mix

    • 1 Tbsp cumin

    • ½ Tbsp black pepper

    • ½ tsp onion powder

    • ½ tsp turmeric

Steps

  1. Preheat oven to 400°F.

  2. Peel and boil the potatoes in a large pot of water until soft.

  3. Drain and coarsely mash the potatoes in a large bowl using a fork or spoon. Let the potatoes cool for at least 30 minutes.

  4. Add egg, flour, garlic, salt, cilantro and spice mix to the potatoes. Stir until all ingredients are combined and the potato mixture is smooth.

  5. Shape the potato mixture into small fritters. Roll a small amount of mixture into a ball then press until ~3 inches in diameter. 

  6. Place fritters onto an oven-safe pan. 

  7. Bake for 20 minutes.

  8. Enjoy!
