Eggs & Rice

As seen in “Wonderful Words” Season 2, Episode 8

Ingredients

  • 2 cups of cooked rice (white or brown)

  • 4-5 eggs 

  • ½ an onion

  • ½ green bell pepper

  • 3-4 mushrooms (optional)

  • 1 cup of andouille sausage

  • 2 tbsp of butter

  • 2 tbsp of avocado oil

  • Cajun seasoning

  • Salt and pepper


Steps

  1. Cook rice thoroughly in rice cooker or preferred method

  2. Beat eggs in a separate bowl with seasonings

  3. Sautée the andouille sausage and put that aside once cooked

  4. Add butter to the same skillet and allow to melt down

  5. Add all vegetables and sauté until softened or transparent

  6. Add avocado oil and fold in rice

  7. Mix it all together until evenly distributed 

  8. Add in beaten and seasoned eggs

  9. Stir until eggs are cooked through and mixed into the rice mixture

  10. Salt, pepper, and add cajun seasoning to taste
